2024年西部地区医院食堂卫生现状调查及管理反思

目的:了解2024年西部地区医院食堂卫生现状,为部队医院食堂科学开展食品安全卫生管理提供依据。 方法:采用分层随机抽样的方法,选取西部地区46个部队医院食堂为研究对象,依据《部队餐饮单位食品卫生监督量化评分表》进行现场调查。 结果:46个餐饮食堂单位,总体评分为89.22±4.17分,最低分为76.14分,其中等级为A的共有39个,占比84.8%,等级为B的有7个,占比15.2%。结论:西部地区部队医院食堂短板主要集中于环境设施、食品加工卫生、卫生管理、餐具消毒、建筑布局及食品采购贮存六个环节。建议部队医院食堂:1.灵活引入医院食堂经营管理模式。2.强化食堂从业人员培训。3.加强预防性卫生监督。4.引入HACCP管理机制。5. 医院食堂的智慧化管理。
